Watercress, Cantaloupe and Prosciutto di San Daniele Salad

Ingredients

  • 2 tablespoonslime juice
  • 2 teaspoons honey
  • Salt, as needed
  • Pepper, as needed
  • 3 tablespoons olive oil
  • 1 large bunch watercress, washed and trimmed
  • 1/2 cantaloupe, peeled and sliced
  • 1/3 cup diced red pepper
  • 3 ounces Prosciutto di San Daniele, cut into 1x3-inch strips

Directions

  1. In a large bowl combinelime juice, honey and a pinch of salt and pepper; whisk in olive oil.
  2. Add watercress and red pepper; toss gently until coated.
  3. Add prosciutto.
  4. Season to taste with salt and pepper.
  5. To serve, divide cantaloupe among four salad plates. Serve salad over cantaloupe.
