Sweet Potato Gratin with Montasio

Yield: 8 servings

Sweet Potato Gratin with Montasio


3 tablespoons butter

3 pounds sweet potatoes, peeled, thinly sliced

1 yellow onion, sliced

1 cup grated Montasio cheese

2 cups heavy cream

1 clove garlic, minced

¾ teaspoon salt

¼ teaspoon black pepper


Heat oven to 400°F. Generously grease a 9 x 13-inch baking dish with some of the butter; set aside. In a large bowl combine potatoes, onion, cheese, cream, garlic, salt and pepper; toss to coat potatoes.

Turn potato mixture into prepared dish; dot with remaining butter. Cover with foil and place on a large baking sheet. Bake 45 minutes. Remove foil; continue baking until sweet potatoes are tender and top is golden brown, about 30 to 40 minutes. Let sit 5-10 minutes before serving.
