4 focaccia rolls, split in half
1 cup ricotta cheese
2 tablespoons snipped chives
Salt and pepper to taste
1/4 cup honey
1 teaspoon white truffle oil
16 slices Prosciutto di San Daniele
1 cup baby arugula
Pre-heat broiler. In a small bowl, combine ricotta cheese, chives and a pinch of salt and pepper; set aside. In another small bowl, combine honey and truffle oil; set aside.
Place bread slices, cut side up, on a baking sheet. Broil until golden brown, about 5 minutes.
Spread ricotta on one slice of focaccia and drizzle with truffle honey. Top with 4 slices Prosciutto di San Daniele and a small handful of arugula. Slice sandwich in half and serve. Repeat with remaining ingredients.
