Yield: 12 BiscuitsPrint
3 cups all-purpose flour
1/3 cup sugar, plus 1-1/2 tablespoons
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 stick cold butter, cut into large cubes
1-1/2 cups buttermilk
1 cup coarsely grated Grana Padano
1/2 teaspoon black pepper
1 cup sliced strawberries
1 tablespoon Gran Marnier
1/4 teaspoon orange zest
1 cup heavy cream whipped to soft peaks
Pre-heat oven to 400°F.
In a medium bowl, combine flour, 1/3 cup of the sugar, salt, baking powder and baking soda; add butter, incorporating it into the dry ingredients with a pastry blender until the mixture is the size of peas. Add buttermilk and half of the cheese. Stir until just combined.
On a lightly floured surface, roll out dough into a 1-inch thick circle. With a biscuit cutter, cut 2/12 inch rounds. Place rounds one inch apart on a parchment lined baking sheet. Bake for five minutes. Remove from oven, sprinkle with remaining 1/2 cup cheese and pepper. Bake 7-10 minutes, until golden brown.
In a medium bowl, combine strawberries, Grand Marnier, orange zest and remaining 1-1/2 teaspoons sugar. Serve biscuits with berries and cream.
