Montasio Grilled Cheese Sandwich

Yield: Makes 2 sandwiches

Montasio Grilled Cheese Sandwich


  • Butter
  • 4 slices white sourdough bread
  • 8 slices Montasio cheese
  • 1 jarred roasted red pepper, drained, patted dry, sliced
  • ¼ teaspoon crushed red pepper flakes
  • 2 tablespoons olive oil
  • 8 large fresh basil leaves


  1. Heat oven to 400°F.
  2. Lightly butter one side of each bread slice.
  3. Place 2 bread slices, buttered-side-down, on a work surface.
  4. Top with cheese, peppers and pepper flakes.
  5. Top with remaining 2 slices bread, buttered-side-up.
  6. In a heavy ovenproof skillet, heat oil over medium-high heat. Add sandwiches cooking until golden brown on the bottom, about 2 to 4 minutes.
  7. Turn sandwiches over and transfer skillet to oven.
  8. Bake about 5 minutes, until golden brown and cheese is melted.
  9. Remove from oven.
  10. Carefully lift up top bread slices and insert basil leaves.
