Chopped Salad with Prosciutto di Parma

Ingredients

  • 1 head baby romaine lettuce, chopped
  • 4 pepperoncini peppers, seeded and sliced
  • 6 cherry tomatoes, halved
  • 4 sundried tomatoes, chopped
  • ½ cup cooked farro
  • 4 ounces mozzarella cheese, diced
  • ¼ cup olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 2 hard cooked eggs, quartered
  • 6 thin slices Prosciutto di Parma

Directions

  1. In a large bowl combine all ingredients except eggs and Prosciutto di Parma.
  2. Toss.
  3. Place on a serving platter.
  4. Top with eggs and Prosciutto di Parma.
  5. Sprinkle with fresh pepper, if desired.
