6 to 8 cloves garlic, unpeeled
3 tablespoons hazelnuts
3-ounce wedge Montasio cheese, grated
1 tablespoon honey
Preheat oven to 400°F. Place garlic cloves on a sheet of aluminum foil tightly wrapping the foil around the garlic. Roast for 20 minutes or until tender. Remove from oven, unwrap, and let cool, about five minutes. Peel and set aside.
Arrange hazelnuts on a small, rimmed baking sheet and place in the oven to toast, about 5 minutes. Remove and set aside to cool.
Increase oven temperature to 500°F. Place Montasio cheese in a small cast iron skillet. Place skillet in the top third of the oven and heat until the cheese begins to soften and the top starts to brown, about 6 to 8 minutes. Remove skillet from the oven. Arrange hazelnuts and roasted garlic around the cheese; drizzle with honey. Serve immediately with toast, crackers or chips.
