Asian Salad With Montasio Frico Crisps


  • 1 cup coarsely grated Montasio cheese
  • 4 tablespoons canola oil
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 2 small scallions, sliced
  • 1 small garlic clove, minced
  • 1 teaspoon grated fresh ginger
  • Pinch of red pepper flakes
  • 1 (15-ounces) can mandarin orange sections
  • 4 cups thinly sliced savoy cabbage
  • 1 small red bell pepper, seeded and sliced
  • 1 cup mung bean sprouts
  • 2 tablespoons cilantro leaves
  • 2 cups sliced cooked chicken


  1. Heat oven to 375°F.
  2. a large baking sheet with parchment paper.
  3. On paper, divide grated cheese into 6 mounds.
  4. With a fork, spread each mound out to make a thin even layer about 4 inches across.
  5. Bake until cheese is melted and golden brown, about 8 minutes.
  6. With a spatula, remove to paper towels to cool.
  7. Meanwhile, in a small bowl combine oil, soy sauce, vinegar, scallions, garlic, ginger and pepper flakes.
  8. Drain orange sections reserving 2 tablespoons of the juice.
  9. Add juice to the oil mixture; whisk to combine.
  10. Place drained orange sections in a large bowl.
  11. Add cabbage, bell peppers, bean sprouts and cilantro.
  12. Add half the vinaigrette to cabbage mixture; toss.
  13. Break up cooled cheese into pieces.
  14. Add chicken and half of the cheese crisps to cabbage; toss gently.
  15. Drizzle with remaining salad dressing.
  16. Top with remaining crisps. Serve immediately.
